Banana Nut Loaf
 
Ingredients:
 
3 Bananas
2 Eggs (beaten)
1/2 cup Honey
1/4 cup Safflower oil
1 cup Soy Flour
3/4 cup Rice polish
1/4 cup Rice flour
1 Tablespoon Yogurt or buttermilk
1 Tablespoon Lecithin
1/2 cups Nuts (chopped)
 
Directions:
 
Combine mashed bananas and eggs. Add remaining ingredients and mix well. Pour into greased loaf pan and bake 1 1/4 hour at 350 degrees or until edges turn brown and leave sides of pan.
